After careful handpicking, the ripe cherries are floated to remove defects, lightly fermented for 48 hours, and sun-dried at the Siete Soles drying facility. This method enhances the coffee’s fruit-forward qualities, giving it a juicy rockmelon brightness, smooth toffee sweetness, and a subtle agave finish.
Filter Recipe:
- 1:20 ratio (15g coffee to 300g water). This brings out the crisp fruit notes and balanced acidity, perfect for an easy, refreshing cup.
