We've had some behind-the-scenes changes and had to pause the blog for a bit, but now we're back with a new lineup of singles, starting with Anaconda!
In Minas Gerais, at the heart of the Cerrado Mineiro region, Sucuri Farm stands as a symbol of dedication. Owned and managed by Danilo Barbosa, the farm balances productivity and preservation with 500 hectares of farmland and over 700 hectares of protected areas. Sucuri Farm’s story is one of resilience—Danilo's parents, Jairo Barbosa de Paula, transitioned from gas station attendants to farmers, using their savings to pursue agriculture.
This yellow Catuai offers an exciting cup: a dessert-like sweetness balanced by a pleasant acidity. The acid profile leans more malic (green apple, pear) than citric, keeping the sweetness bright and refreshing, with hints of lychee, lime, custard apple, and nashi pear!
For filter brewing, we've been enjoying a 1:17 coffee-to-water ratio, with an additional bypass ratio of 2, which brightens the cup nicely. Here’s the breakdown:
Filter:
1g coffee : 17g brew water : 2g bypass water
For espresso, we recommend:
21.5g in, 38g out, 25 seconds.
Fun fact: Sucuri means "anaconda" in Portuguese, so we've added a little twist to the label.
