This controlled fermentation enhances the juicy, wine-like qualities of the coffee. Once fermented, the cherries are sun-dried, locking in the fruity brightness you’ll taste in every sip.

  • Filter: Use a 1:20 ratio (15g coffee to 300g water) to highlight the coffee’s clean acidity and caramel sweetness. This method delivers a balanced cup with subtle grape-like juiciness that lingers beautifully.
  • Espresso: Try 22 grams in, 38 grams out, in 26 seconds. The result? A rich, syrupy shot with bright cranberry acidity upfront, followed by a smooth caramelized sweetness. Perfect as a straight espresso or paired with milk for an extra burst of fruit flavor.
